BBQ meatloaf

Good afternoon,
I used to on occasion get a Boston Market meatloaf sandwich but with only two left in Colorado I decided to make my own. I took 1lb of ground bison and 1lb of ground 90% lean ground beef. I found a few YouTube videos showing to add diced apples to the mix to hold moisture. I Also added diced zucchini, and scallions. I packed the diced and peeled fuji apples into the bottom of the loaf tin and packed the meat on top. Then lit my Weber kettle grill and cooked the meatloaf until it set but wasn't done. Turned it out onto a tray and added my teriyaki, hoisin sauce, ketchup, and soy sauce glaze and cooked till done.

I have done meatloaf on the grill for many years.
Just always did it like any meatloaf cooked in the oven, only cooked it on the grill.
Good stuff!

You'll have to try the apple trick. I like to use lean ground beef as it doesn't leave a greasy mess. It does take a little more prep. Grilling the meatloaf took it up a notch.
 
When there isn’t enough meatloaf leftover for a proper meal, I love a meatloaf sandwich on some really good Ciabatta bread with Cilantro and Pepper Jack.

That's what I had for lunch. Tough to beat. Never thought about cilantro for use other than Mexican.
 
I used to take meatloaf sandwiches to work all the time.
I'm old and no longer cook. so I won't be trying the apples.:mad:

I never used a pan, just hand formed the loaf and cooked it.
 
Anything you can make in the oven, you can make on a grill. IMHO. If I ever build my shack in the woods it will have no stove. A outdoor grill and an instant pot, and I am good to go.

I love me some meatloaf too. I usually do grated carrots as the binder. And I add a little hot sauce or cayan also.

Good heavens, I'm no food critic but ketchup on meatloaf is just nasty. Maybe a little Worcestershire sauce or even a bit BBQ or tonkatsu sauce but straight-up ketchup? Not to mention that almost all commercial ketchup is awful. Maybe garum, yes a splash of garum would be good on meatloaf! :p
 
I have cooked meatloaf on my Weber kettle for several years. 2 lbs of 90/10 ground beef with a variety of garlic, salt, pepper, soy sauce, Worcestershire sauce, and basil. I cook it in my 8” cast iron skillet. Dang it’s good. I pull it off when it’s 140-145 so it’s not over cooked.

Good heavens, I'm no food critic but ketchup on meatloaf is just nasty. Maybe a little Worcestershire sauce or even a bit BBQ or tonkatsu sauce but straight-up ketchup? Not to mention that almost all commercial ketchup is awful. Maybe garum, yes a splash of garum would be good on meatloaf! :p
Hunts natural is like 4 things. Tomato, cane sugar vinegar and spices. I am not a big ketchup person either but it’s the only one I will touch.

I don't really eat anything that I would put ketchup on. I saw a coworker squirt ketchup on a slice of pizza from 7-Eleven. I gagged a little.
 
I use tonkatsu sauce quite a bit. I sometimes add tomato purée, although there's already some in it. If I eat fries, maybe four times a year when I have fish and chips, I put malt vinegar on the fries. Tartar sauce and remoulade go in the bin. I don't put ketchup on dogs or burgers.

I just remembered something. When I was little, one of my friend's mom cooked spaghetti, squirted ketchup on it, and then topped this mess with cardboard box parmesan. Maybe that's why I loathe ketchup. :ROFLMAO:

Cilantro, maybe not with the BBQ but it's certainly good with regular meatloaf. I'm not the biggest fan of BBQ but I am okay with BBQ chicken on the grill.

I only use the French's all natural no high fructose corn syrup variety. Just a little. Notice I Also added hoisin, teriyaki sauce and some soy sauce.
 
And I did add Worcestershire sauce which i forgot to mention. Got to have the umami

According to a boss that I worked for years ago I asked why he dipped his french fries in mayo. According to him thats really popular in Germany as he was stationed there.

Mayo is another condiment that's pretty horrid to me. I can't do mayo on hot food. Maybe a small amount on a cold sandwich. Lots of Central Europeans dip fries in mayo or in a mix of mayo and catsup. The Japanese use mayo quite a bit and their Kewpie mayo is the only one I use on rare occasions - I have a bottle in my fridge. Condiments can be divisive. I love capers but my wife despises them. I don't care for relish, she'll eat that out of a jar with a spoon. It's all good. If we all were to like the same things it would be kind of boring.
