Will cSt on very old oil be accurate?

I'm considering buying a can of Harley (which could possibly be labeled AMF as it's in that age range) Medium Heavy type 75 oil. Even though I've found a seller on eBay who either had clear pics of this having SAE 40 stamped on its lid, or that seller confirmed what the SAE stamping said (can't remember which), I'm wondering if it wouldn't be best for the sake of ending this question once and for all if I bought said unopened can in question and sent in a sample (after warmed up and shook) for testing.

So, does anyone who has some expertise in VOA/UOA know either way if me doing this would yield and accurate result as far as cSt@100C goes? Would the oil have degraded or seperated after all these years (40 years give or take at this point)?

The test result would be valid, but it's likely to show up contamination resulting from a corroded can lining or other problem.
It would be good if you posted some pics of the oil can and contents so we can see how the additives have seperated out and any change in colour etc.
