Which European oils are on the thicker side?

I've been noticing in recent VOA's of Mobil 1 Euro, Leichlauf, etc. that the 0w40/5w40 oils have been on what seems like the thinner side, almost closer to a 30w. We know that VW 502.00 covers multiple 30w and 40w oils, however my tuner suggests a 40w with the tune and turbo setup on 2 of my VW's for what he calls "extra security" with a little thicker oil. Im wondering which oil covers this spec that hasn't been reformulated to be on the thinner side, do we know? Does it really, really matter? Would a 50w oil be a better choice? 2015 GTI and 2015 Jetta for reference. Much appreciated
 
What is the setup on those cars/which tuner/tunes? So many tuned-to-the-moon VWs like you have running the standard 5W40 Euro oils. My VW Golf Sportwagen has a larger turbo, tune, bolt-ons, tracked, drag raced and I'm just running the standard VW502 00 40W oils with no drama. Could look at running the M1 5W50 variation. Liquimoly 5W50 Molygen is another option.

The Jetta is stock turbo, APR Stage 2 Software. The GTI is IS38, running E30
 
0W40: Castrol Edge is on the heavier side, while Mobil 1 is on the lower end and often shows drop in viscosity down to w30 region, based on UOAs here.

5W40: Valvoline MST is quite heavy. Not so much on paper, but is in real world. My engines had the biggest power and MPG drop on MST vs any other 5W40 I tried.

10W40: Mobil 1 High Mileage.

Redline oils usually run on the heavier end of the spectrum, maybe worth checking that out.

Thanks gentlemen. On the off chance I find a good deal on a 50w, any reason to not run it in both? Any known issues with thicker oils in those engines?
 
Keep in mind VAG race cars are running regular old Liquimoly Leichtlauf High Tech 5W40 with the EA888 engines.

Total Quartz 9000 5W40 Energy (the energy is important).

John Deere plus 50 II 0W40 is on the thick side too :D

And the Petronas Selenia Sport (fullSAPS A3/B4) and Selenia Sport Power/Selenia Quadrifoglio (midSAPS C3) 5w40
Kinematic Viscosity 100°C 15,2 cSt, unknown HTHS
For the top tier Alfa Romeo QV(quadrifoglio verde) and Abarths .
