Don't want to heat up the kitchen by using the oven. Not frying. Can I put then in the smoker grill?

Sprinkle with powdered garlic, dried onion, Mrs Dash Spicy, and Old Bay Blackened seasoning…

Put some butter or EVOO on some aluminum foil, double wrap fish,
put on grill outside, or pan on stove medium heat, 7-10 minutes to a side…

You may want to go easy on the garlic…

I know some folks like a lot of seasoning but most white fishes get a rub of garlic powder, salt and coarse black pepper. Just a small amount. After i take it off the grill I’ll squeeze a lemon on the fillets. For me seasoning, whether on fish, steak, chicken etc., should enhance, not hide the flavor.

I would have said to dredge in flour and fry them up in a little oil.

I've struggled to cook fish until I started to use a thermocouple to measure internal temperature. 145°F is perfect.

Not yet, just tried the steak seasoning on a burger.
If you eat chicken you should try the Montreal Chicken, while your picking that up get some Hamburger seasoning, my wife won't eat burgers if I don't use it. I use it in meatloaf, meatballs etc....

I use the steak, chicken and hamburger seasoning to the point it's cheaper to buy it in the bigger bottles at Amazon.

Lake perch is my favorite right ahead of pickerel (walleye). Perch is awesome in a fish fry. Several fund raising opportunities when I was a kid. We lived just off Lake Erie. It was usually at local volunteer fire halls for raising money.

FWIW I found walleye at our Menards on Sunday! I was like 😱! $8.99/lb and then 11% off that. Not a bad price for Great Lakes fish.

Just my $0.02

how about poaching perch fillets? i poach salmon fillets in a stovetop pan just covered with water and a bit of lemon juice. i’m not much of a cook though…
