One of my favorite local restaurants makes a killer vegetarian version of a crab cake with lion’s mane mushrooms. I love regular crab cake, but think the mushroom version is somehow even better.

One of my favorite local restaurants makes a killer vegetarian version of a crab cake with lion’s mane mushrooms. I love regular crab cake, but think the mushroom version is somehow even better.

I do not know how to prepare Lion's Mane mushrooms, so I just sauté them in olive oil. They brown very quickly.

I did not get any crab cakes this spring. Stupid me for not paying attention.
