Was cleaning out the freezer the other day, making way for a half beef coming this summer. Buried beneath some decent sized briskets was a package of four New York strips. Interesting, 2023 beef and hidden all this time for me to discover. Traeger at 410F and used some new Prairie smoke steak spice with a shake of sea salt. Cooked medium rare and absolutely fantastic!

As well, speaking about cleaning out the freezer. As a donation to the cattle penning club, we donate ground beef for the lunchs. Usually making taco beef for taco in a bag. Cooked 20 pounds last weekend. In total we have cooked close to 100 pounds over this past year and a half, so much so that we almost are onto the ground beef we got last year...... all I can say is that speckle park 4H beef is amazing.
