Fired up the Traeger today. Made ribs and chicken breast. Then fired up the gas grill to braze the ribs and cook up some New York strips. Some direct heat and then reverse sear. The steaks came out phenomenally cooked to medium rare and just a great chunk of meat. Only issue is what ever I messed up with the seasoning. They just tasted a bit bland. Perhaps next time I will season a bit more at cook time.

The ribs were the best I have made. Usual overnight wet brine. El Blanco and some southern style dry rub but reduced amount from the last time. I reduced the time wrapped in the oven and allowed them to firm up a bit before grilling. Brazed a bit before and after they were sauced.

I can't think of a significant new massive infrastructure project in the western world started this century. My speculation is trade deficits are why the western world is unable to do execute massive new infrastructure projects.

I broke my 16 hour fast today with my daily glass of chocolate milk (with my vitamins) and my morning iced coffee. My weight loss stalled over the last week but today I achieved my first goal, which was to get under 190 pounds. I weighed in at 189.8 today 😃 Hopefully I will get to my next goal by the first day of March (next goal is to get under 180)
