What are you eating right now?

BBQ chicken over mixed greens, cabbage, some rice, a little macaroni salad, and tomatoes. Neither could I nor would I want to eat deep-fried food every flippin' day. You are what you eat and a symptom-free yet 70% occluded carotid artery with another 4 years before a lethal event occurs is not on my list of personal goals.

Beef ribs that are a bit too bony.
 
Had my birthday BBQ/cookout with the family yesterday.

20lb prime grade brisket (about 15 lb post-trimming), smoked for around 14 hours then allowed to rest a few more afterward being serving. Just seasoned with coarse black pepper and kosher salt. One of the best briskets I have done to date. The texture/tenderness was just spot on! Fork tender, but still a touch of bite. Not over or under cooked, it was fantastic.

Scratch made sides and my BBQ sauce. Mac n Cheese was a mix of sharp cheddar, american, fontina and pecorino romano. Great mix!
