Snouts are rarely included in our neck of the woods. Typically, a cheap shoulder roast is used. I didn't cook it lard, either. Just olive oil, lime and orange juice. Plus cumin, Mexican oregano, garlic, salt and pepper. Baked in a heavy covered cast iron pot in a 300f (150c) oven for about 4 hours. After it's fall apart tender you shred it into chucks and fry or broil it a little bit too crisp up the edges.I had to look up what carnitas is.
