What are you eating right now?

Traeger ribs finished on the little kettle. Reheated some chicken breast on it as well and made a medley of garden veggies. Was really good!

I'm poaching several pounds of chicken breast for meals this week. I butterfly cut the breasts yesterday and marinated over night with salt, olive oil and lime juice. To cook, I added all of the chicken to a large sauce pan with all of the marinating liquid and will cook for 10 minutes on medium heat and then will turn off the heat and let it finish cooking with the lid on for another 20 or so.
