Im not much of a sauce fan either I like the meat to be in the spotlight by its self quality meat shouldn't need anything
I generally agree with this but occasionally I will have a steak at a really great restaurant where they have come up with an incredible sauce (like one made from red wine) and it just amps up the flavor so much (and leaves behind something for the potatoes in the meal)
 
Probably the greatest benefit to the 16 18 20 hr fasting it just shorten the feed window and agree most people especially inactive people should absolutely be doing it.
I solved the obesity epidemic in one paragraph.

I have the Ducane about 15 years no issues just replace the the heat shields every few years. I will say this thing always ran super hot you can sear a steak no problem. I mostly cook everything on lowest setting
