Viscosity for hydraulic jack oils?

Hydraulic jack oils seem to come in a bunch of different viscosity grades for ISO and SAE like AW32/SAE10, SAE20, etcetera.

If Harbor Freight sells SAE20 and I had some SAE10 laying around, how much of a difference does it makes if I just use the Coastal SAE10 jack oil? Is there a reason why some companies make jack oils in different weights?

FWIW: The manual for the jack doesn't actually specify weight. I have never seen any of my floor jacks specify a weight for the oil.
 
do you use the jack outside in winter? get the thinner oil. if not, get the cheaper.

if the oil is too thick when it's cold, the jack will not drop under it's own weight.
