I think I have a lazy thermostat, it does its job approximately but is slow to close when it has to and it is hampering heater performance.

Who makes a good thermostat? I'm thinking SuperStant but I also wonder who makes the NAPA ones, and what the quality of the Delco part is.

While I have this apart, I am going to replace my coolant temperature sensor as well because I believe that it is not working properly, causing me some starting issues in certain temperature ranges.

I just replaced the thermostat in my Saturn with a Stant 195F. Mine was exhibiting the "lazy" syndrome as well, mainly due to a weak spring. The car runs a tad warmer than it's supposed to, so I think the thermostat opens a bit on the late side. The NAPA thermostats are made by Stant as stated on their website.

I have a motorcraft thermostat along with a cap and 3 gallons of Zerex G-05 in the garage.. Going to flush and fill soon. My thermostat is doing the same thing. Very slow. Supposed to be a 192F, but even if it hits 192F it will cool down into the 180s quickly once you start moving.

Stop depending on the stock temperature guage. They are rarely correct.

You may have 2 coolant sensors.
One for the gauge, and one for the computer.
So get the right one.
A NAPA or premium Stant should be fine. Same for the factory part.
Avoid the cheap ones - spend a few more$.

Yes, and as stated on the box. :)
I just bought one a month or so ago.

I am also surprised at people who say how bad Stant thermostats are. From that same Napa web site:
"Stant is the primary supplier to most of the world's car manufacturers"
