Their literature seems to indicate it could be used in wet applications. Would super lube multipurpose grease be suitable to use in place of a marine grease?

For what specific purpose? "Marine" is just as broad a term as "automotive." To determine suitability for an application, one needs to know the parameters.
Just light duty- RC boat
There are RC specific lubes, but I have used Wurth HHS-K on prop and rudder tubes. I like how it sprays on as a thin liquid that flows well, then sets up.
