Commercial ranges and griddles get HOT. And they can always slip food in a salamander(a specialized oven for pans) for a few moments to finish things off. The average home range can top out at 20-25K BTUs. A commercial-spec Wolf can be in the 30-40K BTU range and a wok burner at a Chinese or Thai restaurant can hit 100K BTUs.
