Do I compare Noack & HTHS to determine what oil is best? For example the 5w40 Fuchs Titan Race Pro S has Noack - 6.6%; HTHS - 4.2 I haven't seen anything better than this so does this mean it's the best 5w40 oil available?

Yes and no, just use the Fuchs you will be happy. I prefer 5w or 10w for turbo.

0w oils are not too thin for subarus, or any other car for that matter. The viscosity of cold 0wxx oil is still higher than your oil at operating temperatures. Cars are designed for the visc of hot oils at operating temperatures so the 0w or 5w or 10w etc. are only relevent before the car is warmed up. Do not be afraid to use a 0wxx oil. go to BITOG home page and read "motor oil university". Great info.
