Stupid mistake - risk of long term engine damage?

You got lucky... I replaced a remote oil filter line on my 97 F-150 5.4L. There must have been a burr or dirt on threads where it connects to the engine so it felt tight and I didn't want to strip the threads. I started the engine to test it and my son yelled and I heard a weird noise so I shut off the engine after about 4 or 5 seconds. It obviously wasn't tight and pumped about 4qts of oil all over the drivers side engine and garage floor. I didn't realize oil pumps could move that amount of oil that fast. Tightened it up and refilled with oil and it is still running at over 210K.
