The victim could have the insurance put her back the way she was. Which means a used motor with similar/less mileage if they can't find her old one in the chop shop. The shop doing the work could probably keep the "V8" as a tip though the ins co might demand all the old parts.
If the car is hacked up enough they could total it out and sell it at auction. That would be interesting though because of violating the Clean Air Act etc.
