If the old sensor didn't corode the electric end of sensor they are probably ok as a visual check has been good enough on all the ones I have worked on then do a temp test with the fans because if it passes that then you are good to go on readings. If you want to replace the pigtail to be safe Wells/Airtex still sell the pigtail and Rockauto and Carquest still have them. The pigtail comes with heat shrink butt connectors like the OE authorized repair. PS the ECT and the intake air temp sensor and pigtail are the same parts on Saturn SL cars.
 
I'm with 55 on this one, CTS is a weak spot in old Saturns. I used to have the chart to test the sensor in ohms, but gave away the Manual. On my 93 I had two sensors,one for the computer and one for the gauge.
 
Perhaps driving at a higher speed had greater airflow to the radiator and coupled with easy interstate driving, could that be the reason?
 
Most likely open thermostat or at least a lazy to close thermostat. My Camry had similar (but not identical) symptoms and the thermostat was the culprit but it had 12 years of wear on it.
