Anyone how any special brine recipes they want to share? I have about 40lbs of triploid trout in the freezer from last yr we need make use of. Thanks

Never smoked trout but I have eaten cold smoked trout many times, if done right it is some awesome eating.
I use dry brine. Brown sugar and salt at 3:1. Brine for a few hours, rinse.
That seems to be the basic recipe except fpor garlic and the one I'll use, Thanks
Experiment. If you like the taste, you can, for example, also rub some soy sauce on the fish. As far as herbs go, rosemary, bay leaves, juniper berries thyme, terragpn, and marjoram go well with trout. There are many great combinations. Now I have an appetite for trout.
