I'm not sure if 5 to 7.5k is truly a "short" interval. The Prius will see drains every 5k and the Civic will probably see 7.5k. Fuel dilution seems to be a bigger problem than it used to be which will certainly impact oil life, especially lower viscosity oils IMO. I have a feeling that drain intervals will begin to go down in the future, with the introduction of lower TBN oils, direct-injected engines and turbos. This may all be [censored] from me but that is what I suspect will happen based on what I have seen on the forums so far...

As posted in a few posts up, Toyota 0W20 is 37.4 at 100F and Mobil 1 0w20 is 44.8. Both are about 8 at 212F-- which is what matters. At any temp below 212F, the thinner the better, right?
Any reduction in viscosity is likely to be an improvement in fuel economy, though whether the differences will be discernible is a different story. For us hybrid drivers and/or hypermilers, we may notice the differences.

I am on the Central Coast in Monterey, but I got a semi-local dealer to sell it to me for $4.99/qt.
