Look around locally or even Amazon. Not crazy priced. I used stainless and worked ok but should be good SS not cheapie 400 series. Crock in a temperature controlled or at least coolish spot holds a more steady tempWhat’s the deal with this crock? I think I need to get one. I love kraut.

To each is own. I think homemade much better, but that's just me. Nothing in a plastic bag, that's for sure.I made sauerKraut- 5 gal, 4, gal, 3 gal crocks. Once it is done you should immediately freeze it otherwise it keeps aging. Probably refrigerate it would work. Honestly. Modern sauerkrauts are just as good or better. Hebrew National may be the best. BohrsHead, Kissling anything in a bag and refrigerated. Just not worth making.
