Second Batch of Kraut - Underway!!

I made sauerKraut- 5 gal, 4, gal, 3 gal crocks. Once it is done you should immediately freeze it otherwise it keeps aging. Probably refrigerate it would work. Honestly. Modern sauerkrauts are just as good or better. Hebrew National may be the best. BohrsHead, Kissling anything in a bag and refrigerated. Just not worth making.

To each is own. I think homemade much better, but that's just me. Nothing in a plastic bag, that's for sure.

Everyone raved about my Krout. I am PA Dutch. We invented it. But I am guessing you have not tried Hebrew National.
If you do a blind taste test I would guess at least half will call it a tossup.

I could be wrong. Yours may be superior, But making Kraut is not brain surgery. Oh as I mentioned Boar'sHead is excellent. That might be local.

I'm, nearing the end of my latest batch so it's time to start a new one. Today will be buying cabbage and carrots for the sauerkraut and borscht. The wife yesterday questioned as to what happened to my borscht skills (I haven't made any this season).

There are no organic stores near me so it will be regular cabbage. Soak it in baking soda solution and rinse well...
 
Kraut is according to my taste incomplete without

pepper
cumin
juniper berries
bay leaf
mustard seeds
cloves

cloves are optional - I happen to like cloves but some don't.
