As a child I always thought rockets went straight up. It was an eye-opener to realize how quickly they pitch over. When I was stationed at Mayport, FL in the early '80s we used to walk down to the beach and watch the shuttle launches.

Once out of the atmosphere, a rocket exhaust plume is not constrained by atmospheric pressure, but instead, spreads instantly.
Here is a cool onboard video showing how the exhaust expands as a rocket climbs. Even on the first stage, it's quite evident. This demonstrates how the atmospheric pressure contains the expansion of the exhaust plume.
