Oil for 2025 hybrid Camry

Yes, the ESP x2 0W-20.

I'd probably go with the Restore and Protect 0w-20 or the Mobil 1 ESP 0W-30. My concern would be motor not getting to temperature, possible ring deposits, the constant start/stops.
Get away from the 16 or 20 weights. There are a few choices. For the money, the 0W-30, not the 5W-30 Mobil 1 ESP is blended with the better base stocks than I believe most similar priced oils on the shelf at your local Walmart or parts stores. The Mobil 1 ESP 0w30 is your best bet quality and price wise right now. Otherwise, there are boutique oils available of much higher cost per quart with much higher quality formulations. The problem with that is whether you pay $8.00 a quart or $20.00 a quart, the oil and filter should be replaced every 6 months or 5000 miles mainly due to the fuel dilution issue, low tension piston rings, etc.., etc. I will put some links here for you to look at.

daily driver and about 60 miles per day 5 days a week, country roads/highway
That seems to be an ideal case for OCIs of 10k or more. I've run a couple of 12k OCIs using M1 EP in both a Honda and Volvo and the UOAs always came back looking good. I have no experience with Mobil 1 ESP but you could try using the advanced search function to look at other people's experiences.

That being said I would base the decision on used oil analysis and not advice from strangers on the internet.

These are all great oils but I think for a hybrid 0W-20 would be perfectly fine even for 7,500 miles, especially the ESP oil.
The 0W-30 is rated for 12,000 miles. So, its little brother 0W-20 would be more than fine in a hybrid for 5,000 to 7,500, or even 10,000 miles.

I would go with Mobil 1 ESP 0w30.

I use that in a 2025 Hybrid Rav4 I currently maintain for a friend. That vehicle has the same engine setup as your Camry.

Is it not to thick viscosity wise?
No not at all. When it comes to US spec vehicles I take their “recommendation” as the lowest weight you can use. It’s listed low due to cafe, but these same exact motors in the rest of the world are spec’s to use a very wide range of oils. The rav I maintain runs well on it and another 25 Corolla I maintain calls for 0w8 and it also gets the 0w-30 ESP. They both run beautifully on them.

Both are under warranty and get changed under the free 10k Toyota oil changes at their “scheduled” timelines, and in between by me on the 5k distances with the 0w-30.

The one thing I do find is both sound much smoother at the high end of the rev range. With the thinner oils they sound rather harsh but with the 30wt it’s a nice harmonic engine sound.
