Small company and we just picked up a used Ford box truck with a Diesel it's an "07" I think its a 6.5 or a 6.0 diesel I am not sure? The truck only has 1,700 miles on it and it sat for quite some time. The question is should I run the oil that's in it to brake it in more or should I change it because the oil has been in there since "07"? Is there a brake in oil in it?

I would change it ASAP.

Change the oil with a quality dino oil and run a few short OCIs. Then pick a maintenance plan and stick with it.

'07 would be a 6.0, mine personally likes 5W-40 synthetic, especially when really cold (below 30 F), but any CJ-4 or even CI-4+ diesel engine oil would work fine in it, my '04 holds 14 quarts w/filter, Ford recommends 15w40 above 30 F and 10W30 below 30 F.
