My Korean food dinner

I'll stick to the Korean foods I know. I used to be close with a Korean family and worked for them at their restaurant when I was young. They were making Korean food for the local population, but the menu included Korean style Chinese food for about half of it. It was in the ghetto to a degree, so some of that 'hood goodness' was on the menu as well. If I want the benefits of organ meats, I will just take my grass fed beef organ capsule supplements.
 
Spent about 1 1/2 years at Camp Humphreys Korea in the early 90's. When I had time I would jump on my bicycle and ride around the countryside till I found a tiny restaurant. I memorized how to say, " I'll have your favorite item on the menu". Most of the time I never knew what I was getting. 99.9% of the time whatever I got was amazing.
 
The blood sausage isn't particularly Korean, as it used to be a staple of the British Isles and can be had here, though I wouldn't recommend it. On the whole Korean cuisine is excellent for those of us that love spice and pickles. Korean BBQ, wings, and bulgogi are some of the best things ever...
 
Where are all the sauce, the chilly pepper, the chives, the sesame oil, the sugar, etc?

If anything most east Asian countries except Japan probably eat those. You have to do it right and they have to be fresh to taste right. Not a fan of these 3 items but I can see why people like them. I'm more of a beef tripe and fish swim bladder kind of guy.
 
Korean short ribs are one of life's great eating pleasures. Every other Korean dish can be "thrown in the tall grass".
