Most unique restaurant concepts you've seen or dined? A baked potato restaurant opened up near me.

Reminds me of a place called the "Olive Garden." They serve mostly spaghetti. I make it at home when I'm broke, why would I go out for it?

On the topic of baked potatoes, look for recipes for "twice baked." They're basically like Devilled eggs-- you bake them, scoop out the starch, mix it with cheese, chives, onions etc then put it back together for a little more time in the oven.
I love twice baked potatoes but can't stand the smell or taste of deviled eggs uhhh. Oddly enough a couple of months ago Chef Nick Stellino who has several restaurants and PBS shows was on a live chat. I jumped in and asked about any good eggplant recipes. According to him in Sicily they par bake the eggplant then scoop it out (leave the skin on) mix it with breadcrumbs, seasoning then put it back in and cover with sauce and cheese.

Locally the first “hotdog only” restaurant has opened since about 30 years ago. They have 20 varieties of toppings but only one type of hotdog with a variety of regionally named selections including Chicago dog adjacent.

Their sides are honestly better than the main ontray . And the price vrs food QTY is poor because unlike other restaurants like this that bundle a pair of hotdogs into a combo everything is always full price, Ala carte no coupons.

I went there once to try, tastes good but not worth the price of entry there is a local bar that has a chili dog day that is honestly a steal in comparison.

Yup! They don't see the single dog price as high.
A "Buy 8 get 1 Free" is the deal you might get. You'd hope locally made franks can be made with fewer chemicals.

Houston's Jason's Deli has a diverse menu.
The only potato dish I saw was the 'American Potato Salad". Whatever, I'd go to one in a heartbeat were I in Houston.

LDB: Which location of Jason's Deli would you recommend to a visitor?

In the1990's: I was taken to a waterside sea food restaurant. It was the real deal.
I felt I was south and east of the city center.

Before moving we enjoyed the Sugarland location. After moving the Webster location. We've reduced our roaming radius and not been to a Jason's in quite a while. They're still there though so they must be doing at least some things right.

Ate at a burger place once that had a topping buffet/bar. You ordered basically the bun style you wanted, how done you wanted the burger, and the side. Then you went through the topping bar. This was a looong time ago, if I remember correctly they added a dollar to your bill for every 3-4 toppings you added. They had about everything you could have ever wanted.

How about a place where the main entree is mac and cheese? The only time I've ever tried it was takeout since their main restaurant was closed at the time. It's a place in Oakland, California called Homeroom. Not sure what's with the name other than I guess they couldn't come up with anything else. The menu has a really good mac and cheese base, but then it's all the stuff that goes on it like pulled pork, chicken pot pie, elote, or garlic.

Come to think of it, I've also been to at least one place that was just poutine.

My favorite was in China. bowling alley, shrimp fishing combo. You catch the shrimp and choose one of three prep methods (very good). I don't exactly love bowling so I ate a lot of shrimp!! The shrimp ponds, all indoors were at one end.

I remember being in the Monterey, California area for the US Open golf tournament. I just wanted a place to watch the NBA Finals and was talking with someone who was local. Asked what might be a good sports bar in the area, and they suggested this combination sports bar and sushi - I think in Marina. Definitely a locals hangout and I did get the sushi and didn't get sick.

I watched another game at a restaurant in Carmel. More conventional.

"Food in a Cone" (Ocean City, NJ). On the boardwalk, name pretty much says is all. They probably had 40 different combinations plus a breakfast menu.

My favorite: Mac-n-cheese with lobster

Definitely not representative of all areas, but I have noticed in the past 13 years that places that are very specialized don't survive.
