My mom found a recipe in the local paper and asked me to cook it. (I'm the master cook of the house... I enjoy it)

Tex-Mex Stir-fry with Black Beans.

BTW: That recipe says it makes 6 servings... More like 3 normal people so you want to double it for 3 people.

Doubling it will provide about 2 cups worth of food per person.
 
sounds like something my wife makes but she also adds corn bell peppers and green onion. Its really good. The lime wedge thing is a good idea I'll have to tell her.
 
I was thinking about making some rice and serving this on top of it next time... Would be awesome.

I love Tex-Mex style recipes...

would serve my family of 4 and have two work lunches.

Albeit it would be served with rice, and some vegetables.
 
That sounds like too much effort. If it's more complicated than a peanut butter-and-jelly sandwich, then I don't make it (not really, but still...).
 
Steve, here is another recipe you might want to try.

Southwest Chicken and Crab

2 cups chopped cooked chicken
2 cups chopped imitation crab*
1/3 cup chopped pimentoes
1 1/2 cups finely chopped celery
1 finely chopped green pepper
1 finely chopped white onion
1/4 cup butter or margarine
2 - 10 1/2 oz. cans cream of mushroom soup
8 oz. chopped green chillies
1 -6oz. pkg. Uncle Bens Long Grain & Wild Rice Mix Original recipe -- prepared according to directions.
1 or 2 Jalapeno peppers finely chopped

Topping
1 cup grated cheddar cheese and 1 cup grated Monterey Jack cheese

Sautee celery, onions and green peppers in the margarine until they are soft.

Mix all remaining ingredients with the celery onion mixture and put in a 13 x 9 pan. Top with the cheese and bake at 350* degrees for 1 hour

* You can use all chicken if you prefer and it is very good also

I do not know how many it will feed. When I have 4 to 6 people over we have left overs. I take it to pot lucks and there is never anything left. I serve it with a nice salad and a light dessert. Lemon pie or Angel Food Cake cut crosswise with sherbert between layers and frosted with cool whip.

I have it in the oven as I type this... Can't wait to try it. I couldn't find Pimentos up here but got everything else. I substituted some diced Pepperoncini's.

I will let you know how it turns out... Smells delicious.

I used Quiznos sliced/cooked chicken in the recipe as it was easier that cooking and slicing chicken ahead of time. Our chicken has a Mesquite seasoning to it so it should go well with this recipe.

You can never go wrong when adding canned creme off mushroom soup to any dish!!! When my Wife isn't their to cook for me I make instant mashed potatoe's or cook rice and pour a can of heated mushroom soup over it! Viola a fast meal that fills me up!!!
 
I make lots of dish's with Mushroom soup, black beans, rice, chicken. Can't go wrong... These are staples for me.

I buy pre-sliced seasoned & cooked chicken strips from a friend of mine that owns a Quiznos near me. She sells me a couple bags of it at cost and I keep it for recipes...

Our chicken is 100% white mean chicken breast and not processed in any other way or does it have preservative. It just is sliced cooked in a garlic chicken broth and then frozen and sent to the stores.

Helen that was delicious... It had too much heat for my dad, but I'm a fan of spicy food. Thanks for sending me that recipe. It is going into my collection.

Here is another way to fix chicken. I remove the skin on the chicken and sear it in a small amount of oil and then add a can of cream of chicken soup and 1/2 can water (or milk) and simmer for about 1 hour. Serve with mashed potatoes and a salad. I know most of you fix it that way also but sometimes we forget about the old recipes.
