Mach 2, has this ever been done?

Nobody deliberately flies through a thunderstorm.

Here is a Harrier that made that mistake.

I'm thinking the results would be better at mach speeds.
If by better, you mean more extensive damage, you would be correct. The Harrier was subsonic.

Kinetic energy = 1/2mv2.

So, double the velocity, get four times the energy.

With the same size hail - four times the energy isn’t going to be pretty.

I was thinking the wave from the plane would deflect the hail, as well as cause zero effect from any turbulence as well. Maybe needs hyper sonic to do that?

That’s not how shock waves work - the hail will still go through the shock wave, with minimal change in direction.

The turbulence will also go through the shock wave.

I don’t know enough about hypersonic flight to answer that, but I suspect it will not make much of a difference.
