Lunch at a "old school" 'Chinese restaurant

It is hard to find a good old fashioned sit-down Chinese restaurant in the Nashville area anymore.
The vast majority of Chinese restaurants around here now are “take out”, not offering a place to sit, or, if they do, its generic cheap tables and chairs in the glare of harsh, fluorescent lighting, with no table side service.
And most aren’t good.
A few are acceptable.
Where I grew up in Germantown, TN, we had an authentic one called “China Garden”. The lighting was dim, and the walls were adorned with traditional Chinese tapestries and art, etc, with Chinese traditional music playing softly in the background.
The food and service was impeccable.
But like so many others like it, it closed.

I crave Mongolian Beef. Found a place that makes it great. $12.99 w/ white rice. Enough for 2 meals. I don't reveal this place as it will get too popular and they raise the prices, then everyone quits coming. Then they close. Mum's the word
In my 20s, my friends and I would have chinese food at a small restaurant in a mall in calgary. Famous Chinese Restaurant was the name and Eileen was the owner and server. Always great food and small talk about things. They moved to Canmore (1 hour west of Calgary) about 25-30 years ago. I went a couple of times after the move, but basically forgot about it for the last 20 years. This thread brought back that memory and it looks like they're still going. I need to go and check it out.

We have a take out place that is pretty good. The woman at the counter was so incredibly mean. I think she called me fat to my face, but I don't speak Mandarin. But I think her daughter is working the counter now and she is much more pleasant.
Just to the south of us in Lowell MA is the venerable China Star. Delicious food and open very late. Dangerous combo because 2 am matais can be had along with the best garlic green beans ever.

No, first time I have heard of it. Sounds OK, if it's fun, it's got to be good.
