New pump and hoses, before I fill this with fluid, do I need thread sealant here? I have a tube of Apache thread sealant just in case. I assume yes, but want to ask first.

The threads already have a film of hydraulic fluid on them so will need to clean that.

Hydraulic fittings usually seal with an O-ring or a tapered cone. I can't quite make out what kind of hose / fitting that is. What part of the circuit is this?

for NPT you can use the liquid type sealer.. but make sure the both fittings are clean and degreased.
the proper type of teflon tape is possible but have to be careful no pieces can come off later (ie dont wrap first 2 threads or so)

I believe so, they snug up pretty quick at about the third turn
no need for sealant on those NPT fittings. Just get them really tight. Lots of old Ag tractors running around with NPT threads.

FWIW, if it was an O-ring joint then I would use system lube on the O-ring.
