LEM Double Grinder Issues

Help me, please. I have the LEM #12 and purchased the Dual Grind attachment. I have had absolutely no luck with it. I have tried to grind chicken, Brisket and chuck roast. All unsuccessfully. It gums up and just chews the meat in the auger tube. Looks disgusting. Hard as crap to remove. It's grinding and leaving gray stuff in the meats. It appears to be metal from off the shaft tip. My meats are almost frozen and the tube is frozen. I have the cap on the auger tube loosened by a quarter of a turn per youtube. It messed up last night. I will call LEM on Monday. Oh, LEM customer service told me not to worry about the gray stuff. It was only a chemical reaction from a break in period.
 
Purchased new or used?
Grinder blades installed correctly?
Maybe the meat is too "almost frozen"?
An answer like, "...only a chemical reaction from a break in period" needs details.

Not knowing the name LEM #12 got me searching.
One videographer claimed it was his inaugural batch of meat and it didn't come out grey.
Is your grey stuff sparkly like metal bits added to the meat or more a paste?
Did you rub any between your fingers and smell it? ...possibly taste it?
 
As the son of a retired butcher, and spending too much time in the family grocery store against my will, it sounds like the knife is too firmly secured against the die.

Once I saw the gray paste, I quit grinding and removed the double grinder attachment and finished with the regular setup. No problem.

I would agree if I hadn’t hand tightened and backed it off 1/4 turn. I know it was not too tight.
 
nothing can be put together backwards etc?

gray paste might be break in food lube/oil?
Although usually mostly clear.

not sure what kind of chemical reaction would do anything with gray color.

I’m positive everything is assembled correctly. I’m with you on the chemical reaction. Lol
