Late August of last year I changed the oil on my 2013 Mustang GT 5.0 V8 with 8 quarts of Castrol GTX 5w20 Magnetic plus a Motorcraft FL500 filter. I then drove the car for around 2,000 miles before putting it up for the winter with plans to take it out around late March. So do I keep the oil and filter and run it for my usual 5,000 miles or change it out as soon as it comes out of storage?

If you put the car away after getting the oil good and hot, at least 30 minutes of driving, you'll be fine to go your usual 5K miles.
I've got a sunday driver parked in the garage for 9 years, decided to change the oil and get UOA, it was still way better then I thought TBN of 4.6 ! basically at half life or so.
With 8 quarts in the car, oil aging is spread over all that oil, enjoy the drive and change next year! A late model Mustang engine runs clean enough not to worry. Do you store in a garage? I would think so!

Dude, you have been here long enough to know that a six-month, 2000 mile oil change interval is ludicrous. Are you just trying to increase your post count?

8qts. @ 2k mikes in a modrrn fi engine is still fresh for long term storage.
high capacity system means less TBN loss, even over a high use scenario. Yours is a low use scenario. Change it in the fall for next winters storage, or run it to the next fall (2018). Won't be an issue

Keep it----I am in a similar situation, only with Corvettes. I always run 2 year oil/filter changes, with approx 3500 miles in 2 years
