How long does it take for the underground tank to switch over?

Sometimes they lease tanks from the oil company, so, instantly!

If they didn't, it would probably be 90+% within a week, or a couple deliveries.

This is my understanding after talking to a station owner years ago. After gas was de-regulated years ago, gas is gas until the additive is added when the station tanks are filled. Many brands fill their tankers from the same bulk tank. The only difference was the additive package added. If someone else knows more about this, please share.

fuel tankers also have pumps. they can suck the underground tanks basically dry in no more time than it takes to gravity fill.

drivers occasionally make mistakes(they are human after all), and make "cross-drops", basically, "Dang! I put the wrong fuel in the wrong tank!" in such cases they have to come back out and empty the tank before they can fill with the right stuff.

but yeah, today, fuel is a commodity. in a certain area it likely all comes from one source, with different add packs (added at the point of filling the tanker truck) for different branded stations...

How brisk is the pace of sales of that product at that station?
