Yesterday I drove over 100 miles on the highway at 80 mph on cruise control, the engine was running at 3000 RPMs (redline is 6250.) Is this good for fuel economy, or would it be better to do 70 mph at about 2500 RPMs? I've always thought the closer the RPMs are to the maximum torque output, the more efficiently the engine runs? Just curious for future reference...

You will get better mileage at 70 than 80. [And even better at 60.]
Wind resistance is a huge factor at high speeds, and is proportional to the square of the speed. 100MPH is 4 times the wind resistance than 50 mph, for example.
Friction and rolling resistance are pretty linear, though.
Your engine is the most efficient at your torque peak, for full throttle conditions. This has nothing to do with part throttle breathing or efficiency.
