What's a EASY way to transfer everything from my S2 to my S3? Contacts, emails, contact list, pics, vids.

Kies can do that, can't it?
If you have a google account, which I assume you have in order to get apps and such, then all the contacts, phone numbers, calendars and apps (but not data) will be backed up, provided you used google services and not save locally on the phone.
If everything is on the phone, then it's either Kies or download a back-up app and save on an SD card.

I've never had to manually transfer anything with a Google account. In fact, I didn't even have to manually transfer that stuff when I switched from an iPhone to an Android. Pics and vids don't stay on my phone; they get moved to the PC anyway. I suppose you'd have to manually copy those if you wanted them on your new phone. Or, move them to an SD card, if both phones support that.
I always chuckled at Samsung Kies. Apple users get a hard time because of iTunes. But when I was helping my mom copy pictures from one of her Galaxy phones, I could find no way to talk to it from the computer except through Kies. Ironically, you can connect an iPhone and copy pictures straight across using Windows without any additional software. But that doesn't seem possible with Samsung phones...at least not her old S3.

Well in fact I have never used Kies.
I just connect the phone via USB, and the PC recognises it as an external drive, much like a pendrive or mp3 player. From then on it's simple drag&drop between folders.

A Samsung phone? Which model? That's great -- my mom's Galaxy S3 couldn't do that.

All android phones can act as storage devices, but there is a setting where it can be disabled. Your mom's S3 must've been messed with and changed the settings to charge only or to only use Kies.

The age of the phones is not really a factor, but rather the operating system. I upgraded my Galaxy S1 to Android 4.0 (or something like that) and I could back it up on the cloud. Even on Froyo all my contacts, phone numbers and calendar were on the cloud. It's nothing new
