I forgot if it was the silicates or something else in it that he said could hurt a GM Dex Cool designated system.

Of course, he could have been just following the "do what the manual says" disclaimer, and inventing a possible problem where none existed in order to discourage me.

In most of the latest models it makes little sense to switch away from Dexcool. On some of the earlier models without a pressurized reservoir and that have leaky gaskets, it makes sense to switch. It depends on the year and model. G-05 most likely will not harm the waterpump especially if it is changed regularly. I haven't noticed any difference in waterpump life between using Dexcool and silicated coolant.

Thats what he was doing sure, I've had no problems in the last 5 years with this coolant in,none!

I bled the bleeder on the thermostat housing but I can't find the one under the engine cover. Is it a little brass fitting just like the one on the thermostat?
 
I don't think you'll find another on the 3.8. The 3.1's had two, but as far as I know the 3.8's only had the one on the housing. Fill the system to the full cold line and start the engine. Let it warm up once it starts coming to temp, crack the bleeder open. If nothing comes out, you've still got air. If you get coolant, then let it go a while longer and check again. Keep at it until you've got nothing but coolant coming out at full temp with the system pressurized. If it still overheats, you've got other issues.

Do the cooling fans come on?
Have you replaced the stat recently? With an OEM?
