40x30 garage 8' open truss ceiling. Two led shop lights over a work bench. Have 8 light sockets. Want the garage brite 40 or 60 watt led lights 5000k color?

I would go 100w equivalent led bulbs, with a warmer color. 3k.
Are you asking us all to search around on Amazon for you? Here's one, though this sort of thing often goes on sale on Amazon, sometimes as much as half off so if you're not in a rush you should make a short list of all you'd consider and keep an eye on pricing.

Many people who are doing a larger area where they want a broad light beam, get the beam style similar to what 4' T8 fixtures used to look like, and the linkable ones where each plugs (or direct wires) into the next in series. Of course that is a significant amount more installation work than screwing 8 bulbs in.

My choice would be soft white (4000K) Par 30 or 40 floodlights...

I second going 4000k or 5000k on color temp...it's a work space so you want whiter and brighter light. I have screw in "splitters" on my sockets that allow me to put 3 bulbs on one socket and aimed where I want (using PAR 30s) which works well and was considerably easier than changing fixtures.
