Factory wheels on a newer Mercedes . How am I supposed to get the valve stem cap off with my fat fingers?

A pair of pliers. Just enough to loosen the cap and then finish with your fat fingers. 
1/4 inch hex extension on a screw gun will back it off
Why would you need to remove a valve stem cap? Don't you know that a modern Mercedes comes with lifetime air from Stuttgart?
Doesn’t matter. With a sidewall that thin it will vibrate off before long anyway.
Is it left hand thread?
Our Model 3 valve stems are tucked back; it can be a pain to keep the air chuck sealed. Sheesh.
I bought a new tool to add air to mine. The air hose at our local gas station didn't fit.
I actually used a piece of hose

Before I read your solution, I was going to share a twist on an Andrew Jackson quote. It is a darn poor mind that can't think of a different way to use a tool. Or rather in this case, devise a tool to do a job. And yes, darn was used to avoid getting a scolding from the sometimes oversensitive filter. Andrew Jackson used a different word.

OP, can you show us a picture with your fingers on the cap? From the outside looking in, this doesn't seem too difficult.
Might have another valve stem you haven't found yet.
Well, this a first to me and my co-worker: A valve stem both on the inner and outer parts of the rim.
google sez it's to purge out the air when filling with nitrogen. Huh, learn something everyday. Was on a Mercedes GLK 350. Aftermarket.

Those wheels look to be real fun to clean too, but I've seen worse, a LOT worse.
Mercedes sells a special impact gun socket for the valve stem cover. It’s only $499.99, what’s the big deal?
