Crispy chicken sandwich

If I have fish and chips, I squeeze the lemon juice over the fish., the chips get malt vinegar. If there's no malt vinegar, what a shame, then I may dip my chips in tarter sauce or remoulade. No mayo, please. I eat fries usually plain, just slightly salted. Horseradish sauce is okay on fries. I draw the line at fries with gravy. No poutine for me, please. In short, catsup and mayo are not for me. Some people mix those two into a swirly mess!
 
I don't think good chicken needs cheese but Gouda, or Asiago will pair nicely with chicken.
