Cooking salmon heads

Definitely not my cuisine but yes very popular dish/bowl in other cultures. Mom worked with a lady from Africa that made this fish head soup often we could never get ourselves to go for it.
 
I'd try some. Sure sounds like an honest dish to me.

I've had fish eyeball. Not a big deal. I remember one VP at work said that he had to prove his worth to his future in laws by eating a fish eye. His wife and in laws were from Taiwan.

I do recall after the Hainan Island Incident, the release US Navy crew indicated that they were fed fish heads and rice. They thought it was some sort of punishment, but many claimed that fish heads were served as a sign of respect to guests of honor.

“They took us out on a shuttle to their base, separated us, and held us there for about two weeks to interrogate us.” Blocher recalls the Chinese treating them pretty well physically, with there being no physical torture, and them feeding the crew real food like chicken feet, fish heads, rice, and seaweed. “Apparently that food was, because they’re so poor over there, really good food for those people,” said Blocher.​

I hope I never have to succumb to eating fish heads. But to each his own-I guess.
Cheek meat (yes there's meat if you look for it) is actually delicious just like tail meat. My dad loves eye balls and fighted for it with his sisters back in the days, too hard core for me..

The fish mongers not including cheeks and collar means it is probably only good for soup stock though.
