At the age of 48 I did a career change and pay and benifit cut and became a park ranger.

What about becoming a college professor at either a community college or a university teaching biology. With a Phd, you should be perfectly qualified for that.

As a former prison guard, absolutely, positively dont be a prison guard. The job SUCKS, SUCKS, SUCKS. Plus it's dangerous. If my best friend/son/daughter/wife informed me they were applying to be a prison guard, I would do everything in my power to stop them from making that mistake.

Molecular biology ? You should be able to get a job with a research firm that specializes in regenerative medicine. We need people like you to find out how to trick the body into regenerating new nerves to cure paralysis. There's also the field of growing new organs like hearts and lungs. Finally, there's the project of regenerating entire limbs. On a personal note, I have ulnar nerve palsy in my left hand. If you could find a cure for that, I'd be your friend for life.

Not sure why your degree equates to over qualified. Just means you are expert and dedicated in a certain area. However not overqualified for jobs not related. I could care less about a Full stack engineer I recently hired had a Ph.D. In theology. The box checked was a degree from a decent place.
What interests you? Academia is not the best place for folks to see how real world works.

Adjunct professor is only teaching correct? Associate would be research + teaching?

My brother and SIL have the same pharmacy degree as yours from Sidney, NSW AU.
When they are both working, they rake in the money, but that has been a rare occurrence in the last 8 years or so.
The last thing you want to do is give up because your current knowledge can become obsolete in no time.
Universities in the USA don't want to hire full time. In the interim you could teach single courses that don't pay,
but at least it's an income. Big pharmacy like AM-Gen in USA is a hit and miss depending on research $$$.
Or...look in Canada.
I'm sure you both could find work here, in your field and in the same city.

I'm a student at one of the largest community college districts there is, you don't want to be an adjunct faculty member.
I was told by one of my professors last week you get ZERO benefits at all, and get paid $2,500 per class you teach.
So 4 classes per 3 semesters in a year would be $30k a year.
And almost 9/10 professors are adjunct, very rare they are hired as full time professors.
Apply to a University as a full time professor.
