. I love spicy, crunchy dill pickles. The Claussen kosher dills are my favorite: Crunchy, garlic, pepper, etc. Man alive. . . . Unfortunately I never learned how to make them. Definitely worth persuing though.

Agreed.
I also remember canning sweet pickles with my grandma. Nothing else like that in the world. I have almost perfected recreating her Chilli, but I am way off in recreating her sweet pickles.
 
Those look beautiful tpitcher. Thanks for the post. My wife cans a lot. One of my favorites is her Bread & Butter pickles.

Just today, my daughter brought over some canned pickles, eggs, and jam that are destined for the county fair this week.

My wife loves Dill Pickles, but she doesn't know how to make it so she had to buy it at grocery stores. I had those store bought sometimes but the taste wasn't good.

Tpitcher, your Dill Pickle jars look so delicious, especially the ones with hot peppers. Yours have garlic and store bought has none, may be that why yours is better. Do you grow cucumber yourself or bought it at grocery store ?

At the rate of one jar per request via PM, you will run out of all 19 jars very soon, and getting in trouble with your wife for giving all those delicious dill pickles away.

Thanks, I didn't face the jars for the pic, just took it.

We plant pickling cukes, along with pea pods, beans, tomatoes (roma & regular), bitter melon, sweet mama squash, water grass, lemon grass, chives, mint, peppers, lettuce, etc...

I'm giving away a couple jars here, the rest are mostly spoken for...
 
Those look very tasty! My grandma pickled a lot. There's nothing like hearing steam escaping and the jiggle of the canner. Reminds me of being in Grandma's house as a little boy. And, it reminds me of all the aunts sitting out on the porch snapping beans. A LOT of beans.

The last time I canned pickled beets I wound up with 19 jars. That's a lot of dam*ed beets. I've done saurkraut this year. It's only me second year for [censored], but it's turned out very well.

Peaches off our trees, greens, okra, applesauce, spagetti sauce, and tomatoes have gone through my canner. All that summer garden stuff tastes pretty good for Thanksgiving and Christmas dinners, and is even better in late January and February.

In some circles it's a demonym for someone or something of Germanic origin. I would suggest using the actual name of the foodstuff, 'sauerkraut'.
 
I have been canning home grown vegetables for over 35 years, mostly tomato products (salsa, sauce, & soup), but also pickles, relish, pickled peppers, and pickled garlic. This week I will be making an offer on a 25 acre farm in southwest Virginia and will expand my growing and canning. It's a fun hobby!

Yea, they need a few months to develop the right flavor. Don't sweat the exact date of course... I go 3 months to a max of 2 years. Tip 'em upside down once & a while.

Defy: Wife's Camry sounds great on it. The big thing I noticed is it is leaking less per day than that the last 2 years of Maxlife. The daily drops on the coated cardboard are smaller than they were with Maxlife.

Enyoy the pickles (later).

The can goods look great. They remind me of my Mothers and Grandmothers. Food that has been canned at home is the best ever. Thank you for the photos. They reminded of the wonderful food my mom made.
