Can an oil pressure relief valve 'stick'?

Just bouncing some thoughts and ideas here.

We bought a VW Transporter that had an intermittent oil pressure light last month and it has seemingly fixed itself.

The van had been sat for 3 years prior, moving only for occasions reasons such as its annual inspection. I viewed the van last month and during the test drive the oil pressure light came on. The owner seemed genuinely confused and apologetic and sent it into a garage the next day. An oil flush was completed (Liquimoly Oil Flush), a new oil filter was installed (Mann HU719/7), the oil was changed (Quantum Longlife 5w30) and a new oil pressure sender was installed. The owner contacted me and said the van was fixed so I went back up, took it on a 2nd prolonged test drive where the the oil pressure light stayed off, and I verified that a new sender was fitted so I bought the van.

About an hour into the drive home, oil pressure light again. I pulled over, removed the oil cap and verified I could see oil in the head so carried on figuring it was a wiring issue. During the 6 weeks we've had our van, the oil pressure light issue has gone from a daily every-single-drive occurrence, gradually reducing in frequency until not seeing it now for 2 weeks. I drove over 300miles on the weekend and not once did it come on!

Things to note, not knowing the garage had done a flush and oil change when they replaced the sensor, I recently did another oil change with Mobil 1 FS 0w40. I noted a fair amount of sludge, hard carbon and bits of what looked like gasket material in the filter. My current thoughts are that the flush has loosened up some gunk in the engine which over time found it's way to the filter. From seeing the oil pressure light once every few days to it no longer coming on at all, seems to coincide with the oil change. The oil pressure light always seemed to come on at lower RPM AFTER an acceleration where 3000rpm+ was used.

I'm thinking that the oil pressure relief valve had been sticking open causing the low oil pressure light to illuminate, but still flowing enough oil around the engine not to cause any serious harm. Either regular use, the oil flush, the Mobil 1 0w40 or a mix of all 3 has now freed up whatever was causing it to stick. Is this plausible? Is it something that could even happen?

Also, when do I do the next oil change? I have 20 litres of Mobil Devlac MX ESP 15w40 currently on the way to me along with a new oil filter and a magnetic oil plug. Would you change out the Mobil 1 0w40 after a few weeks? Or, should I just wait it out for 6 months?
 
Anything sliding inside the engine can fall prey to deposits/crud/sludge that could cause it to stick. Whether that's your problem or not could probably only be determined by tearing the thing apart once you've eliminated everything else.

Could also be a partially blocked oil pickup.

I'd start with a mechanical gauge (if possible) to verify there is indeed low pressure.
 
I have seen some VW 2 stage oil pumps get sticky and trigger the oil light especially when the oil is hot and thinned down. One thing that you can do (I really didn't want to post this because some will get their knickers in a real twist) but doing an at idle only oil flush with Chemtool or in the UK Pro Tec which you should be able to find in spares shops.

Run the engine at warm idle, pour it in and run at idle for 15-20 min no longer or shorter than 15 min, do not drive or reve the engine above idle. Replace the oil and filter. Use at idle only the product is harmless to turbo and engine bearings.

I would start by replacing the oil pressure sender. Its pretty cheap I would guess. Mechanical gauge might be good also but hard to drive around town looking at the mechanical gauge screwed into the engine block.

Replace oil filter. I have seen a clogged oil filter cause odd problems.

The oil pressure relief (part of the oil pump) would be unlikely.

Appreciate all the advice guys. To add, oil pressure was checked at the garage who replaced the oil sender before purchasing. It was 4 or 5 bar at 2000rpm at 80°c. Well above the specified minimum. I wanted to permanently add a VDO oil pressure gauge but unfortunately there isn't room for the sender without installing a hose to a tee block and installing the OE sender and VDO pressure sender into the tee block. I don't like all the points of potential failure doing it that way so I've side-lined that plan for a minute. Also, all the threads are M10 x 1.0mm which makes it a nightmare to find anything suitable.

I'll drop the oil on the weekend and scope the sump.
