Breakfast quiche/casserole, the easy way

I make these all the time; it's quick and easy! I usually use 2 eggs per person, with a handful of shredded cheese. Cheddar jack or Monterrey jack seem to work best, with all cheddar not working too well. You basically whisk the egg, add the cheese and whatever veggies you like, plus salt/pepper/seasonings. This one is bell pepper and onion, but asparagus, zucchini, and even broccoli work well. Sometimes I pre cook the veggies in a pan so they are softer, but it's not necessary. Mix all of it together and put it in an appropriate size greased casserole dish. For this one, I stuck sliced ham and American style cheese in the middle so it's like a Denver omelet. Throw it in a pre heated oven for a minimum of 30 minutes at 350 degrees, and depending on the size and how many eggs, it might have to go 40 minutes/until the cheese gets golden on top. Really easy and tasty.

My Boy Scouts do something similar in a cast iron dutch oven for Troop breakfasts. We add shredded potatoes and finely cubed ham or precooked crumbled sausage to the mix. I can't describe how good this tastes on a cool morning in camp.

I like the shredded potatoes idea. There seems to be no end to what you can do with this as long as you get the flavour combinations right.We had never heard of it before.
 
to be a true "quiche" it needs a crust.

This is a simple modification, and doesn't make your recipe harder.
You can just get a premade pillsbury crust from the refrigerator biscuits/croissants pastry section, and cook it in a pie tin.

We made one like yours and also put in asparagus, additionally we added shredded potatoes as R8ORS suggested, gorgeous, what a find, thanks for posting this.

Glad you guys liked it. I like the idea of adding potatoes. Another great option is green chilis. he recipe is basically a knock off on green chili egg casserole.
