I make these all the time; it's quick and easy! I usually use 2 eggs per person, with a handful of shredded cheese. Cheddar jack or Monterrey jack seem to work best, with all cheddar not working too well. You basically whisk the egg, add the cheese and whatever veggies you like, plus salt/pepper/seasonings. This one is bell pepper and onion, but asparagus, zucchini, and even broccoli work well. Sometimes I pre cook the veggies in a pan so they are softer, but it's not necessary. Mix all of it together and put it in an appropriate size greased casserole dish. For this one, I stuck sliced ham and American style cheese in the middle so it's like a Denver omelet. Throw it in a pre heated oven for a minimum of 30 minutes at 350 degrees, and depending on the size and how many eggs, it might have to go 40 minutes/until the cheese gets golden on top. Really easy and tasty.
