Personally I'd just use the Mobil 1 "Extended" myself in the 5W-30 mode if you gonna go by your OLM. I must admit thought I'm not comfortable going that far on any synthetic oil. I would get the oil changed around the December year and have an OCI once per year regardless of the miles you do even though it's a synthetic. Just make sure you get an oil filter than can go those kind of miles.
As far as you first question goes I think you can use Dexos and there should be no issue. I heard on this forum that the Dexos brand has more solvent in it to help keep your engine clean for longer OCI's like your planning.
In my 08' Impala SS and my 2013 Camaro RS I use M1 specifically in both cars in the 5W-30 versions and am very happy regardless of wether other brands tote better performance.
