Bacon: which kind do you prefer?

From the grocery store Presidents Choice Old Fashion Style is good, comes in 2.2lb packages and is cut maybe twice as thick as normal bacon, which is perfect, and they don't seem to inject any water into it.
We have made our own but it seems we over salt it or over smoke it.

My other favorite is Bobs Bacon for $2/package! The local owned independent grocery store gets packages that got the strips all tangled up, and its just plain bacon sliced a bit thicker than average, with a bit of water injection, but not too bad. For $2 we always cook up the whole package or 2 sometimes.

I also slice it myself with an inexpensive slicer.
I used to slice by hand but it was never very consistent and extremely tiring. Like you I invested in a basic consumer-grade slicer which works OK but is kinda small. I found out that by laying the slicer on it's side and not using the sliding feeder I could just push the whole slab across the blade by hand. My wife would hold the slicer in position while I did the cutting, being extra careful when I got near the and to avoid adding a fingertip to the pile. I save the last inch or so to cut into chunks for a future pot of beans, but use a Kevlar glove just in case.
A vacuum sealer is another good investment. That prevents freezer burn for all the extra bacon, I'm not going through all that effort without making a lot.
