Laundry detergents are full of a bunch of stuff because what we percieve as "clean" and what is technically clean are different. Optical brighter and fragrance or even a fragrence masking agent are in regular detergent. Fragrance free may mean it has an additive to cover the smell of the chemicals in the detergent.

I started doing double rinses and I can use almost any detergents now, you are exactly correct on that matter of double rinsing.
PH means very little as the clothes should be rinsed at the end of the cycle.
